The Oliver restaurant has made it way as the newest addition to the Country Club Plaza. The Oliver was formerly known as The Republica boasts a new restaurant concept, which is now American cuisine redefined. Their masculine interior has extended tufted navy blue couches as seating booths. Along with an amazing bar that showcases some of the best top shelf alcohol and cocktails. You can also find several feminine touches throughout as well. The interior feels as if it’s a restaurant that extends into a cozy family room. – Don’t forget the intimate private dining area as well.

Appetizers
Pork Nuggets (Confit pork, smoked mozzarella, jalapeno, and bbq sauce) – What is pork nugget exactly?
Pork confit (meat cooked slowly in its own fat) diced jalapeno, mixed bbq sauce, fried in balls then sprinkled with mozzarella cheese. First, the presentation is mouthwatering – I can’t recall a time I unraveled my silverware so fast (lol!). The pork nuggets have a slight crisp on the outside and when you break them the deliciousness is revealed. As you bite into them, you’ll experience wonderland on your tongue! Trust me when I say this appetizer is a must order.
Smokey Hot Wings (dry rubbed and cilantro ranch)
If I may be honest, my guest (my father in law) enjoyed the wings – so much so I did not get one bite. Which tells you how delicious they were, during the breaks in bites he talked about how delicious the season was. Every few bites he would stop and say, I can’t quite figure out the seasoning but it’s so good. If you are a wings fan these wings are your new best friend.
Salads:
Shrimp Louie (Jumbo gulf shrimp, avocado, tomato, iceberg lettuce boat and Louie dressing)
This colorful yet fresh shrimp salad is perfect to eat all summer long, it’s simple and delightful.
BG (baby kale mix, heirloom carrots, honey crisp apple, pecans, watermelon radish, Manchego, honey mustard dressing)
This is “the” summer salad of the season. It has everything you would ever want in a salad – tart, sweet, crunchy, and something unexpected as well. The watermelon radishes gave this salad its edge! Watermelon radishes have a fruity taste then slowly transforms into a slight zing!
Entree:
Ruby Red Trout (Louisiana spiced along with collard slaw)
This was my first experience with trout and I must say it was a wonderful first date. The trout absolutely perfect! The collard slaw complimented the trout and the heirloom carrots sautéed in garlic butter were superb.
The Oliver although the newest kid on the restaurant block has exactly the right “IT” factor to satisfy your culinary taste buds.
