Tex-Mex Layered Fiesta Bowl Soup

When it comes to the Super bowl food, I often think of hot wings, rotel cheese dip, and other finger foods. This year I wanted to think outside the box for my Super Bowl feast. This four letter word came to mind – SOUP! Wow, Soup really!?! Yes, Soup is a perfect way to please and feed the family. But wait! Let me explain…

Easy Tex-Mex

A co-worker and I went to lunch at a local Mexican Restaurant. I glanced over the menu and placed my order for the lunch special one homemade crispy taco and Momma’s special soup. Throughout each bite I thought this would be better if they just added a little bit of this and did that. Really, leave it up to the food blogger to critique right? My soup obsession went from friendly thoughts to recreating until it was absolutely delicious. And out of my obsession the Layered Tex-Mex Fiesta Bowl Soup was born.

Layered Tex-Mex Fiesta Bowl Soup

This amazing Tex-Mex layered soup is easy and delicious.

Ingredients
  1. 2 Cups - Store Bought Rotisserie Chicken (shredded)
  2. 1 McCormick’s liquid Taco seasoning with Chipotle and Garlic
  3. 1 Ripe Avocado
  4. 1 Bunch of Cilantro
  5. 1 Large store bought Black Bean Pico de Gallo
  6. ½ can of Swanson Chicken Broth
  7. 1 Corn Tortillas
  8. 2 Cups of Mexican Rice – adapted from http://www.culinaryhill.com/restaurant-style-mexican-rice/
  9. Chili Lime Seasoning with Sea Salt from Williams Sonoma (to taste)
  10. Kosher Sea Salt (to taste)
Instructions
  1. Make Mexican Rice first - this takes the longest time
  2. Add shredded chicken to a heated sauce pan, then add half of McCormick’s Chipotle and Garlic Taco seasoning
  3. Combine sauce and chicken in pan stir thoroughly. Then add two cups of chicken broth to pot, season the broth with Chili Lime Seasoning & Kosher Sea Salt – Season to taste
  4. Bring broth to a boil. Once the broth has boiled take off heat. Pour seasoned broth in a bowl.
  5. Take one corn tortilla and cut into strips, then add olive oil to a heated pan. Place uncooked tortilla strips into pan and fry until lightly golden. Remove from pan and place on paper towel to absorb oil. Sprinkle with a little Chili Lime Seasoning
  6. Cut Avocado into chunks or strips – depends on your preference.
  7. Now the layering begins: Add Mexican rice to the broth, then add sauce chicken, black bean pico de gallo, avocado, and tortilla strips. Top with chopped cilantro. Serve Immediately.
Notes
  1. Note: Want to kick it up a notch? Add a dollop of Sour cream or Mexican shredded cheese. Do you like spicy? Add jalapenos or a dash of hot sauce.

    My stomach GROWLED. Yummy post!!

    This is right on time. On the Border has been getting too much of my money here in Korea. I don’t have a lot of options to cook foods like this since a lot of the ingredients here are imported and EXPENSIVE (I paid the equivalent of $7 for ONE avocado here once). I need to buddy up with a military pal and go shopping on base for American products. I’m gonna make that a priority after seeing this post.

    This looks so delicious. It looks indulgent and delicious, but it could easily be low carb too without the tortillas and rice, but either way I bet it is tasty. I can’t wait to try it!

    I make a similar dish that I call Mexican chicken chili because I use ground chicken. I’ll have to try this. It sounds pretty easy and really tasty.
